I am having a hell of a time getting the Uplink installer to run. I get this error:

/home/mewshi/.setup31541: error while loading shared libraries: libgtk-1.2.so.0: cannot open shared object file: No such file or directory

Any ideas?

From the error message it would seem you either do not have libgtk-1.2 installed, the installation's corrupt, the system can't find it or you have a lower version than 1.2.

If you (re-)install libgtk-1.2, that should normally fix the problem (with the risk of offending: to do that run sudo apt-get install libgtk1.2 in a terminal. Or use Synaptic with a search for "libgtk". Note that there's no dash/hypen inbetween "gtk" and "1.2").

I'm also having this problem with x86_64 version of Ubuntu. I *have* installed:

libgtk1.2
libgtk1.2-dev

Just for good measure, I ran ldconfig. Still getting this problem.

Tried in Wine, too - it ran great until I tried to change the screen resolution. Now it won't launch at all... or rather it launches under wine, but the screen locks up and I get no display.

To my very limited knowledge, there is no x86_64 version of Uplink. So what you'd need is the 32 bit version of libgtk1.2, and I don't know whether that is readily available.
