Text is just a representation of the 1s and 0s computers actually deal with. 3D graphics could quite feasibly represent them too.
It wouldn't be a sim, but hacking a system would be the in-game intent, much like in it is Uplink, which is also about as realistic as a headshot making your entire leg fall off.
