Kitchens. Still borked. We have no real idea how much food they produce, how much they require, what the cook/prisoner/stove/fridge/time ratios are. Basically nothing. The game seems to be able to tell me how many prisoners are going to eat in the canteen - mousing over in logistics gives me the information "Predicted Demand" - what would be a great partner to this is how much a kitchen was capable of producing, even if it assumed optimum staffing. I know it shows the production during meal times, but its all over the place because its just real time 'food on hand' stats. It goes up as meals finish and down as people eat them and just really shows me nothing I cant tell by watching it happen.
It would be really handy if this hypothetical 'Predicted Production' would got up or down in real time if I placed a stove or fired a cook, or not if those weren't the things holding back/reducing production. Also, pleease let me assign cooks to kitchens. This would mean I would be able to figure out productions by, for example: assigning cooks until a kitchens "Predicted Production" stopped rising, then alternatively building fridges/stoves until it stopped rising again and then from that being able to at least estimate requirements.
Semi topical rant
At the moment the food boxes have amounts and stuff - all of which is pointless because I have no idea if having 400 potatoes for 40 prisoners is awesome or horrible. This is actually a large problems - the game has some real depth - all the items have stacks and amounts, which I assume takes a decent amount of processing power somewhere, but its all really for not. I could sell every food tray in my prison, and it would really have no effect - new ones are brought for very little and everything moves on. I think some of these smaller details either need to be brought to the forefront somehow, or for the sake of performance they could be abstracted a little more. For example, instead of keeping a running total of serving trays, just have there be an infinite amount available at a serving table and have washing destroy them.

Hey, yeah kitchens are messed up a bit but the best way to predict supply is by looking at it when it is at the very top. It does show you the actual supply, which is nice. Although I do agree a predicted overall average would be good too. I just kind of avoid getting to much into the kitchens but here is a calculator for your kitchens and I think it tells you how much will be made:
