I've been playing Prison Architect for over a year and I only just discovered that inmates will eat their meals sitting in a normal chair.
I had a canteen that was too small, so I expanded it into a common room and forgot I left some standard chairs in there. And I spotted some inmates sitting in those chairs eating their meals.
So that left me wondering what else is there I don't know about? And that then leads to the problem - How can I find out what I don't know exists?
How to know what I don't know?

Canteen:
- toilets
- showers
- Phone
- Benches (without tables)
- pews & prayer mats
- weightbenches
- Infirmary ... yes yes just the few tiles for it
- etc
Yard: (what works great)
- toilets
- benches, benches with tables
- pews & prayer mats
- etc
Cell:
- anything goes
- normal doors ... locks are for bad guys, not good inmates
Any Room where prisoners reside for longer than passing through:
- TOILETS!!!!!!!! (chapel, classroom, workshop etc)
Not sure what you don't know, but above hooks in on your topic of "chair works in canteen"

Re: How to know what I don't know?
the idea of normal doors for cells is interesting... I'm always having to manually open cell doors ...
I started putting phone booths, sofas, prayer mats in my Protected Custody and supermax cells
My PC prisoners only ever get out to eat, and spend the rest of their time in their cells, and they seem to be the most happiest prisoners I have...If only I can get their meals delivered then I can do away with their canteen...

Threehorns, your post comes across as rather condescending and somewhat arrogant. Probably not meant, but it does read like that.
Incidentally, putting toilets everywhere causes issues with pathing for me once my prison gets past 1200 inmates as the inmates seem to pick the furthest possible toilet to use. I get it working fine with toilets just in their cells. Well, except for my prison of infinite evil, which has no toilets. Or cells. Or anything other than 700 1x1 solitary cells full of nothing. And is the most profitable prison I ever made.
