Can I put more than one prisoner in a cell?
Is it possible to put 2 beds and a toilet in one cell? Since most prisons have two people per cell?

You can put 2 beds and 2 toilets but you can only have 1 inmate per cell.

That's kinda stupid. And why do we only have one floor? I want to build a skyscraper prison.

This isn't SimTower. Welcome to Prison Architect, it's still in alpha development.

I'm new to Prison Architect also. Dormitories are already on the suggestion list, and I'd like to second this. Very badly needed. Apart from this: I'm really glad I picked this one up at Steam. Very promising.

Oh man. I did a 3 bedroom deluxe suite in one corner of my prison. Would be dandy if they tied prisoner to bed instead of cell.

You could zone your cells as holding cells instead, then there would allow two prisoners inside. Problem is it won't count towards your maximum prisoner count, and you sometimes need to micromanage it.
