I tend to panic, then wait for the sprinklers to start.

Watch the nice, crackling flames while everything burns to the ground just nicely, find out about sprinklers, facepalm, rename the heap of ash to "phoenix.prison" and, having learned from the experience, rebuild from scratch with teeny-tiny amounts of money, while watching more than 40 strangely unburnt prisoners flee from the wide open, but still existing main gates.

Just now: Remember having forgotten to install any sprinklers, AGAIN(!), and slightly panic while trying to scratch some funds to correct that.

Never happened to me either, but I'd exploit one of the bugs posted on Twitter: have your workmen package up the flames and put them in storage.
