Default camera FOV, hiding the UI (etc.)

I can see it's possible to fiddle with camera FOV and other settings for specific camera panning shots / cinematics in the scripting, but that's not what I'm aiming for.

I'm planning on booting up Darwinia and taking some screenshots, and I'd like to be able to change the default FOV for the free-moving camera, and, maybe I'm missing something blindingly obvious, can't find where to do this?

I'd also like to be able to hide the UI (and the cursor). Other than simply deleting or making entirely transparent the relevant textures, is there any way of achieving this?
