What are good ways to cook delicious pizza? In a recent Cook's Illustrated recipe for pizza dough they take on the challenge of cooking pizza in home ovens, which cannot reach the very hot temps used by the pros. They recommend pre-heating the pizza stone for at least 45 minutes at 500 so it can gather a lot of heat. If you don't want to use a stone, you will still benefit from a good pre-heat (also, use the uppermost rack). They also put a little sugar in the dough (I think about 2 tbs in 16oz flour) to help with the crisping and browning.
