I wonder if Anyone knows some fun bot-fight game meeting following criteria:
- has good interface
- is easy to learn, yet provides lots of combinations
- is not based on using yet another shitty pseudo-assembler language

You mean a progamming game, where you program the bots for tasks like destroying enemies?
The best one I can think of is an old DOS game called Omega. That's a game where you design, not just program, a robot tank from the chassis to the weapon it uses. You can even create the "arenas" where the machines duke it out. The interface is Windows-like, so it shouldn't be to hard to get around in.
It's considered abandoned so it should be freely available on the net. Try The Home of The Underdogs to start, or try searching the net to find it.

Ahh, forgot to add - not_Omega
And HotU is down for some time now... although accessible via http://209.120.136.195/ but there are no screenshots and some downloads won't work

I suppose you have tried robocode http://robocode.sourceforge.net/ it's written in java and i think the
bots are programmed in java also.
