Technically, "ale" is contrasted only with "lager" as a category of beer. Neither refers to the "style" of beer (IPA, porter, stout, etc), but instead refers to the varieties of yeast used in brewing. Ales and lagers can both run the gamut from light to dark, low ABV to high, sweet to bitter, and so on. Indeed, I am fairly certain that Guinness is an ale, while most of the crappy mass-produced American beers are lagers. That being said, there may be subtleties of American English vs British English that I am not picking up on. ;)

I've brewed my fair share of beers in the past.. http://www.beertutor.com/articles/ales_vs_lagers.shtml The main difference is the temperature it's brewed at. Though different yeast strains do help with refining flavor.

According to the document to which *you linked*:

Ales are made with "top-fermenting" strains of yeast which means that the yeast ferments at the top of the fermentation tank. Actually, they typically rise to the top of the tank near the end of fermentation. Ale yeasts also tend to produce chemicals called esters that can affect the flavor of the beer, depending on which strain of yeast is used. Note that in rare cases, there are some brewers that use "bottom-fermenting" yeasts to make ales.

Lagers use "bottom-fermenting" yeasts which sink to the bottom of the tank and ferment there. Because they collect on the bottom of the tank, they can often be reused. The yeast in lagers does not usually add much in the way of flavor. This typically comes from the other ingredients in the brew (malt, hops, etc).


That is, except in the case of "rare exceptions," my previous post was correct, your own experience notwithstanding. The difference in temperature has to do with the ranges at which the various varieties of yeast thrive best.

I'm not saying they don't have any flavor, but it's definitely on the background in all of them. Including IPAs. I don't need it to be in-your-face strength, but everything I had tasted like immensely watered down lemonade with some alcohol additives. It's like sparkling water compared to cola: the sparkling water is not without its flavor, but when you expect cola it just tastes like water (which made seeing this poster a little ironic).

By the way, I know what all of you are thinking when a Dutch person starts talking about beer, so let's get something clear: I dislike Heineken immensely (in this part of the country it's earned the nickname 'pond water'). Some of the proper beers we build here are Amstel, Hertog Jan and Grolsch (its brewery being less than 5 km from my home), all of which I have seen in England at some point or other so I encourage you to go out, look for them and compare for yourself. :)
