Both, neither has any effect of course, as the job is set to prisoner, not workman/guard. Guards won't pick up uniforms either... If you get this to work, mind posting a screenshot? Reasonably sure prisons are segregated, best you should get is all male or all female prisoners with an actual choice for the employees.

The laundry room MUST have a door, just slap a big one in and lock it open so the guards can patrol by and see in if you don't want to dedicate a guard to it. Size doesn't seen to matter much.
