I think by blueprint you mean foundation? The game has no mechanism currently to cancel a placed foundation. You just have to sit back and watch it get built. As for demolishing part of a room, including walls, usually you can just build "Concrete Tiles" on top of destroyed walls to conver...

A really useful thing to know is that instead of removing walls, which converts them to a patch of dirt, (which is tagged as "outdoors") you can build "Concrete Tiles" right on top of them. This will convert them to a concrete tile, but more importantly, to "indoors."

Recommend, force prisoners who get into your kitchen to walk through metal detectors with something like this. They will still steal but at least they will be tagged for search.

To tell a guard to escort a prisoner, select the guard then right-click the prisoner. Sometimes the prisoner simply cannot be reached by the guard. That is a bug, and is reported here, with workaround.... http://bugs.introversion.co.uk/view.php?id=12

The "de-zoning" bug is a known issue. It happens when loading a saved prison file. Every single time you load a prison file you need to check your zones to be sure they are accurate.

I don't think he's stuck, he's handcuffed. Just remove the line "shackled true" and save the file. That should do it.
